Authentic Semolina Halva Recipe

Ingredients:

  • 150 g slivered almonds

  • 180 ml (about ¾ cup) sunflower oil

  • 1 cup coarse semolina

  • 1 cup fine semolina

  • 1 tsp ground cinnamon

  • ¼ tsp ground cloves

  • 3 cups granulated sugar

  • 4 cups water

  • Zest from 3 oranges

  • 1 tsp vanilla extract (or 1 packet vanilla powder)

Instructions:

  1. Preparation: Preheat your oven to 180°C (350°F) on the fan setting. Spread the slivered almonds evenly on a baking sheet lined with parchment paper and bake for 5-8 minutes, until lightly golden. Set them aside.

  2. Toasting: In a large non-stick pot, heat the sunflower oil over medium-low heat. Add both types of semolina and begin toasting. Stir continuously with a wooden spoon for about 4-5 minutes, until the semolina takes on a beautiful, golden color and releases its aromas. Add the cinnamon and cloves, stirring for a few more seconds.

  3. The Syrup: Carefully add the sugar to the pot and remove it from the heat. Next, add the water, orange zest, and vanilla extract. Return the pot to a low heat and stir constantly.

  4. Thickening: This is the most crucial stage. Continue to stir for 10-15 minutes until the mixture thickens. You'll know it's ready when it easily pulls away from the bottom and sides of the pot and forms large bubbles.

  5. Finishing Touches: Remove the pot from the heat and add the toasted almonds. Stir well to incorporate them. Pour the mixture into a mold and let it cool and set for at least one hour.

  6. Serving: Unmold the halva and sprinkle with a little cinnamon. You can enjoy it at room temperature, warm, or serve it with a scoop of vanilla ice cream for an even more impressive result.
