Ingredients for the Stuffed Tomatoes
2 large tomatoes
2 eggs
60g low-fat feta cheese
30g low-fat grated cheese
2 tbsp low-fat yogurt (2%)
1 tsp olive oil
Salt and pepper
Your choice of spices (e.g., oregano, basil)
Instructions
Preparation: Preheat the oven to 180°C (350°F).
Hollow out the tomatoes: Carefully cut the tops off the tomatoes and scoop out the pulp with a spoon. Keep the tomato pulp in a bowl, adding the olive oil to it.
Prepare the filling: In a separate bowl, mix the crumbled feta cheese, yogurt, salt, and pepper.
Stuff the tomatoes: In each hollowed-out tomato, first place the feta mixture at the bottom. Then, crack a whole egg on top of the cheese mixture. Finally, sprinkle with the grated cheese and your chosen spices.
Bake: Place the stuffed tomatoes in an oven-safe dish, which you've already covered with the tomato pulp you set aside. Bake for about 15-20 minutes, or until the egg is set and the cheese is golden brown.
Notes:
You can add other vegetables to the pan, such as zucchini, peppers, and eggplant, for a more complete meal. In this case, add a little water to the tomato pulp in the pan.
